Holiday Two-Tone Parfaits


The spirit of the Holidays are obvious in every mouthful of both pumpkin and Bar Harbor® New England Style Indian Pudding. After all, both are an East Coast original and have a place in our hereditary cooking. By all means, substitute the pumpkin with all Indian Pudding if desired. Who said parfaits are only for the summer?

1-1/2 cup milk, divided

1/2 cup sugar, divided

1/2 cup canned pumpkin

1/2 cup Bar Harbor® New England Style Indian Pudding

1 teaspoon each cinnamon and nutmeg, divided

3 egg yolks, beaten

3 tablespoons cornstarch, divided

2 teaspoons vanilla

“Candied” Chestnuts:*

1-1/2 cups cooked chestnuts, roughly chopped*

1 cup sugar

2 tablespoon honey or corn syrup

2 tablespoons molasses

1/2 teaspoon ginger

Whipped Topping, if desired

Have two saucepans at the ready, but we will only make one pudding at a time, unless you feel brave enough to multitask. Add half the mik, sugar, all of the pumpkin, half teasooon each of cinnamon and nutmeg, half the beaten egg yolks, half the cornstarch. Whisk together well and place in one of the saucepans on medium heat. While whisking constantly, let cook until thickened and creamy, about 2 minutes once boiling. Remove from heat to cool while making Indian Pudding mixture. Follow same directions, using remaining milk, sugar, cinnamon, nutmeg, egg yolk and cornstarch, using the Indian Pudding instead of pumpkin. Once cooked, cover and refrigerate both puddings at least one hour to chill. Set aside while making “Candied” Chestnuts.

“Candied” Chestnuts: In a large skillet, add the chopped chestnuts, sugar, honey, molasses and ginger. Place skillet over medium-high heat and cook for 4 minutes, stirring constantly. If it begins to smoke before 4 minutes, remove from heat. After 4 minutes, remove from heat and transfer to a bowl to cool.

Remove puddings from refrigerator and whip to a smooth consistency. Assemble by layering a quarter of the pumpkin mixture into a parfait glass, then a quarter of the candied nuts. Top with a quarter of the pumpkin cream and lastly the whipped cream(if using) and a sprinkle of nuts. Repeat with remainder and enjoy.

Makes 4 parfaits.
